Both forms can be found in the late summer and fall, when honey mushrooms are also making fruitbodies. E. abortivum fruits on the ground near dead or dying trees, usually in places where honey mushrooms are also fruiting or have been seen in the past. The mushrooms are common in North America, inhabiting most places east of the Rocky Mountains.
Ecology: Parasitic on species of honey mushroom and probably also living on woody debris and leaf litter, growing scattered or gregariously near decaying wood in hardwood forests, or in leaf litter near decaying wood; often encountered with Armillaria species fruiting in the vicinity; late summer and fall; widely distributed east of the Rocky Mountains.
The Pale shrimp like"Aborted" Form: An irregular glob of tissue 2-10 cm high; surface whitish, discoloring brownish; with white and pinkish areas inside; microscopically containing hyphae from Entoloma abortivum and hooney mushroom species.
Cap: 2-8 cm; convex with an inrolled margin, expanding to flat, broadly convex, with or without a central bump; fairly bald, or with appressed fibers; dry; gray to grayish brown; the margin not lined.
Gills: Attached to the stem or, more commonly, beginning to run down it; close or crowded; pale grayish at first, later becoming pink from maturing spores.
Flesh: Thick; white; unchanging when sliced.
Spore Print: Pink.
There are many theories about how the Shrimp of the Woods are created, the one that I feel is correct is that the aaborted entolomas are produced through a reaction of an entoloma species with honey mushrooms when growing in the same vicinity.
The older that Shrimp of the Woods get , the dryer they become which allows forest duff and leaves into the cracks, with this in mind, try to harvest the younger smoother, less cracked ones to lessen the workload when You get home.
Clean the mushrooms by cutting off the bottoms of the one that were in the dirt and then rinse them in cold water. Pat dry or place on a cloth to absorb extra water. As with any ushroo, fresh is best so try to eat within three days, store in a breathable bag in the fridge, freezing is also an option. There is no strict rule when it coes to freezing: some people dry fry to remoe excess water, others saute in a very small amount of oil, soe people put the cleaned mushroom straight in a freezer bag and let it be at that. Its up to you.
Start by cleaning your mushrooms, making sure to get any dirt out of the crevasses. Rinse under cool water and pat dry. Heat the skillet and dry fry your shrimp to get a stronger flavor (optional) Put a tablespoon or two of oil in a skillet, and once hot add your mushrooms. Season with a little salt and let cook on a medium-high heat, stirring occasionally, until browned.
Place the cooked mushrooms in a bowl, and set aside.Add the apple juice, sugar, soy sauce, ginger, garlic and chili pepper into the skillet. Stir to combine and bring to a simmer. Cook for several minutes, stirring occasionally, until the sauce has reduced some and is a bit thicker and more syrup-like. Once you’ve achieved a viscosity you like, return the mushrooms to the pan and toss to coat. Add your chopped scallions and serve- over rice or rice noodles is delicious!
